What’s a Tamale, Anyway?

Our tamale cakes are a creative riff on the traditional Mexican tamale.

To help you better understand our new menu item, let’s take a moment to define the traditional tamale.

A tamale is a stand-alone meal that is cooked and served out of either a banana leaf or corn husk. It’s said to date back to as early as the times of the Aztecs, when they served as an easy and portable meal.

Usually, the tamale will consist of a mixture of masa or corn dough and fillings, which are then wrapped in the leaf/husk and steamed. The process of steaming firms up the fillings, making them easy to consume while on the go.

The tradition of tamales has held steady over many years. Today, tamales are often more elaborate than the ancient versions of yester-year. It’s not unusual to find tamales with creative or gourmet fillings. It’s a great way to honor a tradition yet explore culinary creativity!

At Borracha, our newest menu item is a nod to the traditional tamale, but with our own unique twist.

Our tamale cakes are served in cake or patty form, making them the perfect canvas for some delicious toppings!

The flavorful cakes, made from corn dough, are topped with a generous serving of tangy-sweet BBQ braised chicken, topped with sauce, cheese, and tasty fixings like pico de gallo and micro cilantro. They’re served warm and toasty…just another great idea from Borracha to keep you warm during the cooler months!

While these tamale cakes might be slightly untraditional in their execution, we think that you’ll find yourself experiencing love at first bite!

Smokin’ Mamacita: The smokiness of the El Silencio Espadin Mezcal works wonders with the rich tamale cakes and BBQ chicken; it’s joined with Casamigos Blanco, Aperol, guava nectar, lemon juice, and simple syrup for a truly memorable cocktail.
