What is Mezcal?
Mezcal is a liquor that originated in Latin America around 600 A.D. It’s distilled and made using the agave plant, but rather than steamed in barrels like tequila, Mezcal is cooked in earthen pits, making it stronger and more robust. The term Mezcal is thought to be derived from Nahuatl, the indigenous language of central Mexico, and loosely translates to “oven-cooked agave.” Mezcal is typically drunk straight, no chaser because of its deliciously smokey taste, but that also gives it an edge when concocting cocktails as it produces sexy, flavorful variations.
Where’s fire, there’s always smoke, which makes this Mezcal cocktail aptly named. It’s made with Casamigos mezcal and ancho reyes–a chili pepper liqueur that is basically an alcoholic hot sauce. The equal parts fresh lime juice and agave nectar throw metaphorical water on this water, giving it both its name and smokey taste. This drink highlights the flavor in the Slow Roasted Pork Carnitas for a rich and robust combination.
